The difference between Soba noodle and Udon noodle are:
Udon is the noodles made from wheat.
Soba is the noodles made from buckwheat flour.
Mostly those are served either with a dipping sauce, or in hot broth as a noodle soup.
Especially Soba is famous for healthy food like as to prevent high blood pressure.
Wakame is a typical Japanese seaweed.
For Miso soup, salad, and for toppings.
And it is very famous that Wakame contains high levels of calcium.
This is the recipe of Wakame Soba. Very good for vegetarians, or also for diets.
Ingredients:
1 pack of Dried Soba noodle
1 grip of dry Wakame seaweed
4 to 8 spring onions
few sesames
Soup (broth):
1600cc of hot water
3 packs of Japanese Dashi (Japanese soup stock powder)
100cc of Japanese Soya source
2-table spoon of sugar
