Organoleptic properties Lychees in syrup are prepared from mature fruit which have had the peel and seed removed. The fruit
colour ranges from creamy white/ivory to a light pink with the flesh or pulp slightly translucent and the syrup
clear. The lychees should be fleshy and soft, though not excessively mushy or firm and they should be free
from fibrous portions. The flavour is sweet and fragrant, with no off or objectionable odours.
